Postbiotics is a growing health ingredient category that has gained traction on the heels of the definition and scope published by the International Scientific Association for Probiotics and Prebiotics (ISAPP). This talk will cover this definition and compare and contrast postbiotics with prebiotics and probiotics. There will be a focus on the different ways postbiotics can be produced as well as what postbiotics mean for functional food formulations. Examples of postbiotic ingredients will be surveyed that cover different micro-organism species and different host health benefits including immunity and gut health. Lastly, the challenges and opportunities concerning the marketing and positioning of functional foods as postbiotics will be discussed. Speaker: Justin Green, PhD
