IFT, Foods, and Health

The food industry (FI) feeds and nourishes the world. IFT and the food scientist (FS) continuously advance food quality. One quality factor is nutrient content, achieved through fortification. The nutrient content of a foods is known and reported on the food label. How can health be quantified in a food and reported on the food label? A recent White House conference addressed a program on hunger, nutrition and health that will continue for years. The FDA will soon approve the nutrient content claim “healthy”, for food packaging. The consumer wants heathy foods. IFT and its members can and must address the topic of foods and health. This can be accomplished first by and for the FS. The objectives of the discussion will focus on 4 questions. What is health? What are chronic diseases (CD)? What are the relationships among CD and foods? Discussion of the 3 questions led to the purpose of the final question. What types of education programs can IFT initiate, for FS, to sustain and improve health through foods.
